{the palate} chocolate + coconut + raspberry easter cupcakes!

It was a bit of a fail. For me, at least.

I wanted to make chocolate cupcakes with raspberry filling, use toasted shredded coconut on top, like a nest and place a Peep on top of that. Yeah… didn’t work out that way. My lazy butt used boxed brownie mix (not that there’s anything wrong with brownie cupcakes — they just don’t rise like regular cake batter). And the Peep looks awkward atop the cupcake. It was too large! I didn’t want to use eggs because I did that last year.

The raspberry mousse filling was pretty good actually. I thought it was a bit runny, even for a filling. I added 2 tablespoons of confectioners’ sugar because it tasted more tart that creamy. In the future, I’ll only use half a tub of whipped cream and add a stick of butter. (Ooh, mascarpone cheese would be perfect instead of cream cheese. Sorry, these ideas just pop outta nowhere!) Chris thinks this mousse filling/topping would be good with angel food cake or something lighter.

Now all of these ingredients combined…eh. I tried to marry the flavors and it just wasn’t meant to be. Like Ronnie and Sammie. Bella and Jacob. You know what I mean.

But my mother and Godmother loved it! I’m definitely going to tweak it but I’m glad some people liked it! I still have a bunch left if you want to try some! ;)

In other news, the weather is starting act like it’s supposed to! April showers and all of that! (Crazy storm last night, but it was gorgeous today!) I spent the rest of the afternoon walking on the boardwalk at the oceanfront. :)
