Recipe: Steak with Red Wine-Mushroom Sauce

July 28, 2010

Easy but quite flavorful, I say. And I think it could pass for restaurant-quality food! I’ve never cooked with red wine before and the smell alone had me buzzing. Yes folks, I was drunk off of the scent. Having a headache didn’t help in my case though.

Could I take a moment to share how therapeutic cooking/baking is to me? I could have a headache, a crappy day at work, or have a certain “friend” visiting and being in the kitchen just calms me down. With that said, I wonder if you would be interested in some “kitchen therapy” in the near future? I’m not going to say anything else, but like this recipe – it could possibly include some wine. Ya with me?!

You’ll need:
- 4 (4 oz) beef tenderloin steaks, trimmed (about 1/2 inch thick)
- ¼ tsp salt
- ¼ teaspoon freshly ground black pepper
- butter-flavored cooking spray
- 1 (8 oz) package presliced baby portobello mushrooms (I used fresh ones & cut them myself.)
- 1 cup dry red wine (I used merlot.)
- 2 tbsps butter
- 1 tsp minced fresh rosemary

Directions:
Heat a large nonstick skillet over medium-high heat. Sprinkle steaks with salt and pepper; coat with cooking spray. Add steaks to pan; cook 3 minutes on each side or until desired degree of doneness. Transfer steaks to a serving platter; keep warm.

Add mushrooms to pan. Coat mushrooms with cooking spray; sauté 3 minutes or until browned. Stir in wine, scraping pan to loosen browned bits. Cook until liquid almost evaporates. Remove pan from heat; add butter and rosemary, stirring until butter melts. Pour sauce over steaks.

Kirby is sad. He wants steak too.

@Sarah – Yeah, even when I don’t feel like cooking, I force myself too because I instantly feel relaxed after I start! Hehe.

Hee hee. My cats give the same look whenever I make steak… mostly because they know that if they keep it up for long enough, I’ll probably give in and let them have a nibble. :)
Red wine + mushrooms + steak = awesome. I usually add thyme, but the rosemary sounds like it would be quite delicious… will have to try that next time instead.
