Haven’t posted a breakfast recipe in a while. So let’s make a yummy scramble, shall we?
I’ve been using The Weeknight Cook for a bit so I started going through my old fave, Ellie Krieger’s The Food You Crave and found this recipe. This was beyond easy to make and like I said, it’s summer and the heat (110+ degrees!) is making me ridiculously lazy.
As usual, I started to think about a song to add to this post. I was drawing a blank until I saw Inception this past weekend. (Yes, Joseph Gordon-Levitt! <3) Well while waiting for the movie, I saw that Mehcad Brooks would be starring in a new series and I immediately said... "EGGS!" He played Eggs in one of my favorite series, True Blood! I haven't kept up with the 3rd season because I don't have HBO. Sigh. Might have to pull an illegal stunt just to catch up. Wait, what? I wouldn't do that. ;)
I know guys that read my blog just LOVED that picture. :)

Scrumptious Scramble
Adapted from The Food You Crave
Yields 2-3 servings
You’ll need:
- 1 tsp olive oil
- ½ cup red onion, diced
- 1 cup tomato, cored, seeded & diced
- 3 whole eggs
- 2 egg whites
- 2 tbsp milk, optional
- 1 tsp dried dill
- salt & pepper to taste
Directions:
In a medium sized, non-stick skillet, heat the oil over medium heat. Add the onion and cook for 2 minutes, stirring once or twice. Add the tomatoes and cook for 1 minute more. Transfer the onion-tomato mixture to a bowl and set aside.
In a medium bowl lightly beat together the whole eggs, egg whites and milk, if using. Pour the egg mixture into the skillet and cook over a medium-low flame, stirring frequently, until the eggs are almost set. Drain any excess water from the tomato mixture and stir the mixture gently into the eggs. Toss in the dill, season with salt and pepper, and serve.

First off, just really beautiful photos, who knew that scrambled eggs could be so stunning! Second, a big thanks for that beautiful pic of Joseph. :) My friend and I were just talking about how surprised we were that he was so, well, outrageously good looking in Inception.
