Recipe: Coconut Rum Cupcakes with Coconut Cream Cheese Frosting

I made these cupcakes for my best friends’ Easter Baskets (we’re totally late, we know) because I really wanted to try something out of the box (pun intended).   I got the recipe here.  Found the website via the life that we’ve built is deadly.  I want to make all of those cupcakes.  Then have a cupcake taste testing party.  You can help if you want!

Coconut Rum Cupcakes with Coconut Cream Cheese Frosting
From Ming Makes Cupcakes
Makes 24 cupcakes & 3 cups of frosting

You’ll need:
Cupcakes -
- 2 cups flour
- 1 tsp baking soda
- ½ tsp salt
- 1¼ cups light brown sugar
- 1 stick of butter
- 1 egg
- 1 cup buttermilk
- ⅓ cup coconut rum

Frosting -
- 4 oz. cream cheese
- ½ stick of butter
- 2 cups confectioners sugar
- 3 tbsp coconut rum

Directions:
Cupcakes -
Mix flour, soda, and salt.  In a separate bowl, cream brown sugar and butter until fluffy.  Add egg and beat well.  Add buttermilk and flour mixture alternatively while mixing.  Add rum and mix well.  Pour into lined cupcake pan.  Bake at 375°F for 20 minutes, or until toothpick comes out clean.

Frosting -
Mix together ingredients with an electric mixer until smooth and creamy. Frost cupcakes.  I used green food coloring (6 drops per 2 cups of coconut flakes) to make the “grass.”  The eggs are Whopper’s Mini Robin’s Eggs.

All in all, these cupcakes were just okay.  They turned out like muffins because they were dense.  I couldn’t really taste the coconut rum – I think I’ll add a coconut extract next time.  And maybe replace some of the butter with vegetable oil.  As far as the frosting, well, it was the best damn frosting I’ve ever had.  The frosting makes these cupcakes.
