I couldn’t agree with her more…except for the busy mom thing. I’m not a mom. Well, I guess if you count Kirby, then yes – I am a mom. Teehee.
Balsamic Chicken with Baby Spinach
From Ellie Krieger’s The Food You Crave
Serves 4
You’ll need:
- 1 tbsp olive oil
- 3 cloves garlic, chopped
- 2 (8 oz) boneless, skinless chicken breasts, halved
- 8 oz baby spinach
- 2 tbsp balsamic vinegar
- ⅓ cup low-sodium chicken broth
- 1 cup low-sodium canned chopped tomatoes with juice
Directions:
Heat a large saute pan over medium-high heat. Add the olive oil and heat. Add the garlic and cook for 1 minute. Add the chicken (you may season with salt & pepper, it’s up to you – I chose to) and cook about 4 minutes per side, or until cooked through and juices run clear. Remove the chicken and set aside. To the same pan, add the spinach and cook just until wilted, about 1 to 2 minutes. Remove from the pan and set aside. Lower the heat to medium and add the balsamic vinegar and chicken broth to the pan and stir, scraping the bottom of the pan to remove any browned bits. Add the tomatoes, bring to a simmer and cook 3 to 5 minutes.
We used regular ole’ white rice (not pictured) and topped it off with the spinach, chicken and the balsamic-tomato sauce.
It was dee-lish. The acidity of the tomatoes + savory taste of garlic was the perfect combo.

the plating looks lovely! however, i’m not too fond of tomatoes. i really need to come over and watch you cook!
@Katrina – I’m not either, but this dish came together perfectly! And I didn’t feel like I had food coma after eating it. :)
I love easy meals like this. But i love that you ate it with rice even more hahah.
